Our olive oil: a journey from farm to bottle

The Olives

Azienda Agricola La Ginestra is more than a farm—it's a family legacy nestled in a secluded valley in the stunning south of Tuscany. Part of this legacy is the family’s ongoing dedication to organic practices to ensure that every olive is cultivated with care and respect for the environment. Using this sustainable method of farming, the family farm has been producing olive oil of exceptional quality for over 35 years.

The olives at the farm are a blend of different traditional Tuscan varieties: Moraiolo, Leccino, Frantoio, and Olivastra. The trees you will find here, some of which are over 100 years old, serve as living monuments to the heritage and resilience of this region. The mineral-rich soil and biodiverse landscapes offer a perfect, nurturing environment for the olives and ensure that they retain their distinct flavor and quality.


The Processing

The journey from olive grove to bottle begins with a meticulous harvest. During this process, all olives are hand-picked, often using specialized tools, to ensure the highest quality. Shortly after, the olives are taken to a certified organic frantoio(olive mill), where they are cold-pressed at temperatures below 27°C. This process preserves both the rich nutrients and the refined flavor profile of the olives.

Cold pressing goes beyond just preserving flavor; it also protects the polyphenols in the olives. These valuable antioxidants not only provide health benefits but also contribute to the robust, peppery taste characteristic of high-quality olive oil. From harvest to pressing, every step is carried out with the utmost precision and dedication, resulting in an authentic product of the highest quality.


The Final Result

The resulting bold, peppery profile balanced by a smooth, buttery finish embodies Tuscany’s essence. On top of that, the approximately 350 mg/kg of polyphenol content comfortably exceeds the 250 mg/kg needed to be classified as “high in polyphenols.”

This abundance of polyphenols makes our olive oil not just a culinary delight, but also a health-conscious choice since polyphenols offer numerous benefits for overall well-being. Among these are support for cardiovascular health, reduction of inflammation, and its role as an antioxidant.
