Renzo Marinai’s philosophy is rooted in biodiversity and artisanal craftsmanship. The same care that goes into each bottle of wine is also given to the cultivation of Senatore Cappelli wheat, an ancient Italian variety celebrated for its rich flavor, high nutritional value and natural resilience.
The wheat is planted between olive trees, creating a balanced ecosystem where every crop protects the other. This method preserves soil health, provides natural shade and helps maintain the estate’s biodiversity. Harvesting is done by hand, ensuring that both the wheat and the surrounding olive trees are treated with respect.
