    Fusilloni

    Fusilloni means "big spirals," an oversized version of the classic fusilli. Made from Senatore Cappelli wheat, this heritage grain grows nearly two meters tall and produces far less than modern varieties, but farmers continue growing it for one reason: taste.

    We stone-mill the semi-whole grain and dry it slowly for over 30 hours. The large spirals catch every drop of sauce to deliver big, rich, satisfying bites.

Growing up to two meters tall, it is delicate to cultivate and therefore produced only in small quantities, with a focus on quality over yield. Renowned for its superior digestibility, this exceptional grain owes its lightness to a gentle gluten structure and the slow drying process it undergoes before being milled into flour. The result is a nutritionally dense grain with deep, authentic flavor, perfect for those who value real taste and a bite in their cooking.
